Crockpot Tacos - So Easy!

Here is an easy recipe for you to make today. It's Monday so start the week off with a healthy meal and have leftovers to last you through the week. This is what you will need.


  • Salsa
  • Chicken (I use frozen tenders)
  • Taco Seasoning (Love my Taco Tuesday from Flavor God)
  • Soft or Hard Taco Shells
  • Cheese
  • Lettuce, Sour Cream, Taco Sauce and anything else you like with tacos





Throw the chicken in the Crockpot. Shake on some seasoning and pour salsa over chicken. Cook on low for 6 hours or high for 4 hours. When finished take a fork and shred the chicken. Top it with anything you like and enjoy!

**Leftover ideas are in a salad, nachos for the kids, wrapped in lowfat flatbread or just by itself with a veggie. Enjoy!**

Zucchini Noodles

So I am a carb lover, especially noodles with butter and some salt & pepper. When I started watching my fat intake and trying to make healthy choices I knew I couldn't just give  up my carb obsession quite that easily. I kept hearing people talk about zucchini noodles and thought there was no way they would be good. Well, one night I gave them a try and was completely shocked!! The texture and flavor is just like you are eating noodles. Its crazy and so simple!

  • Pick up a Zucchini or Spaghetti Squash
  • Grab your peeler. This is what I use 
  • Hold the Zucchini & peel right into the pan
  • Add a bit of olive oil / any seasonings you like and saute for just a few minutes

 The end result looks like this. YUM!
 You can eat it just like this, add some spaghetti sauce, throw in some lean ground beef or anything you like to compliment your meal. If you are trying to do meal prep, cook a good bit and it will keep in the fridge for a few days without getting too soggy.

What do you snack on?

I talk to so many people who just don't know what they should be snacking on. Or they know what it should be but just are so busy they don't have time to get it ready and end up raiding the vending machine at 3pm. Here is something so easy that your kids will want to help you because they get rewarded at the end.
Ingredients
Lemon Lime Soda
Apples
Blueberries
Strawberries
Fat Free Whip

Directions
Either you or your little kitchen helper need to cut up all of the ingredients. You will want to fill a bowl with the Lemon Lime soda and soak the apples in that for about 3 minutes. This will keep them crisp and from browning while you enjoy your treat. Once everything is cut & apples are finished soaking mix it all together.
Now it is ready for your kitchen helper to have some fun. Scoop out a bowl, add some whip topping and they can drink the leftover soda from the bowl!! #winwin

One of my favorite places to eat is Outback. Sometimes when eating lowfat it can get a bit boring so I love to try to re-create a dish I love and cut the fat in the process. Here is one that we eat a few times a month in our house and the whole family enjoys!
Ingredients 4 (1 pound total) boneless skinless chicken breasts, pounded to ½ inch thickness, see shopping and prep tips ½ teaspoon seasoning salt, I like Lawry’s 4 slices bacon ¼ cup yellow or spicy brown mustard (not Dijon) ¼ cup honey 2 tablespoons mayonaise 1 tablespoon scallions, chopped (green part only) 1½ teaspoon olive oil 1 cup sliced fresh mushrooms ¼ cup fat free cheddar cheese Instructions 1. Sprinkle chicken breasts with seasoning salt. Let sit for 5 minutes. 2. In the meantime, line a microwave safe plate with several paper towels. Place bacon on top and cover with more paper towels. Cook for about 4 minutes until bacon is crisp. Blot well, cool slightly and crumble. Set aside. 3. Add mushrooms to a small bowl and cook in the microwave for 1 minute to soften. Set aside. 4. In a small bowl, mix together mustard, honey, mayonnaise, scallions. Set aside. 5. Coat a large nonstick pan with cooking spray. Add oil and heat. Place chicken in pan and saute over medium heat for 3 to 5 minutes per side until browned. Move chicken to an baking dish that has been coated with a little cooking spray. 6. Spread most of the honey mustard sauce over each chicken breast, then layer each piece with the mushrooms, top with the remaining honey mustard sauce, sprinkle each with crumbled bacon. Finally, top each with 1 tablespoon shredded cheese. 6. Bake in a 350° oven for about 15 minutes, until cheese is melted and chicken is done. Makes 4 servings Prep Tip Pound each breast, one at a time, between two sheets of wax paper or plastic wrap. Pound to ½ inch thickness, with something heavy. A meat mallet, if you have it, a big can of tomatoes or a rolling pin. Or for ease, many supermarkets sell packages of thin slices of chicken breasts.
